Mock Mashed Potatoes
2 heads of cauliflower cut into chunks
2 chicken buillon cubes
3 to 4 Tbs. low fat sour cream
1 to 2 Tbs. or more chopped chives
butter, salt, pepper, garlic powder to taste
grated cheddar cheese

In large pot add enough water just to cover cauliflower. Add buillon cubes to the pot and boil cauliflower until very tender. Drain off water. Mash cauliflower with potato masher. With a whisk add sour cream and chives to taste. Add butter, salt, pepper and garlic powder to taste. Place mixture in casserole dish and top with grated cheddar cheese. Bake 350 until cheese melts, about 10 to 15 min. Serves 4 to 6..
