Whereas, sugar has 4 grams of carbohydrate per teaspoon.

The sweetness of Splenda is not lost during cooking or baking. By using Splenda, one can significantly reduce the carbohydrate and calorie content of low carb foods and retain sweetness.

Flour can be replaced with a low-carbohydrate bake mix. There are several brands of low-carbohydrate bake mixes on the market. The mixes are generally a combination of some form of powdery protein and fiber, such as whey, soy, or oats.

Sometimes baking powder and salt are added to the mixes. Most of the mixes do not contain shortening. You should always read the ingredient label on these mixes to see what has been added so that you do not duplicate the ingredient unintentionally.

Fat or oil can be used in a low carb bread recipe. Fats and oils are free of carbohydrates. However, the amounts of fats and oils should be limited because they are energy-dense. An effective low carb bread recipe will restrict the calorie content per serving as well as the carbohydrate content.

Sometimes you may follow a low carb bread recipe that calls for milk. Non-fat milk or part-skim milk can be substituted for whole milk to reduce the calorie content per serving of the low carbohydrate bread. One can always use 1/2 of the low carb ingredients with their normal counterparts.

For example, if a low carb bread recipe calls for 2 cups of flour, you can use one cup of the low carbohydrate bake mix and one cup of flour. This approach also reduces the amount of carbohydrates and calories per serving of the bread.

Below is a delectable and healthy low carb bread recipe:

WHOLE WHEAT ONION BREAD

1 small onion, finely chopped (1/2 cup)

1/2 cup thinly sliced green onions

1 cup low carb bake mix

1/2 cup whole wheat flour

1/4 cup of Splenda (artificial sweetener)

1 1/2 teaspoon baking soda (if it has not been added to the low-carb bake mix)

1/2 teaspoon onion powder

1/2 teaspoon dried marjoram leaves

1/4 teaspoon salt

1 cup nonfat or low-fat buttermilk

1 egg

1 tablespoon vegetable oil

1/2 cup bran flakes, crushed

DIRECTIONS:

1) Heat oven to 375 degrees F. Spray 8 1/2 x 4 1/2 inch loaf pan with non-stick vegetable cooking spray. Dust slightly with low carb flour. Set aside.

2) Spray 6-inch non-stick skillet with non-stick vegetable cooking spray. Place onions in skillet. Cook over medium heat for 3 to 5 minutes, or until clear, stirring frequently. Remove from heat. Set aside.

3) Combine flour, sugar, baking soda, onion powder, marjoram and salt in large mixing bowl. Set aside. In small a mixing bowl , combine buttermilk, egg and oil. Stir in onion mixture to flour mixture.

4) Beat at medium speed of electric mixer for 1 minute, scraping bowl frequently. Pour batter into prepared pan. Top evenly with bran flakes.

5) Bake for 45 minutes to 1 hour, or until wooden pick inserted in center comes out clean. Let stand for 10 minutes; remove from pan. Cool completely on wire rack before slicing.

Servings per recipe: 16

Serving size: 1 slice (51 grams)

Calories: 80 per serving

Carbohydrate: 10 grams per serving
